Where a cloud kitchen's customers actually are
A cloud kitchen has no street, no room and no walk-ins. Its shop window is a tile in a delivery app, and in the UAE that mostly means talabat, which held 74% of the delivery market according to a 2023 US Department of Agriculture report. Deliveroo, noon Food and Careem split the rest.
So the marketing plan has three layers: rank inside the apps, convert the menu view into an order, and move repeat customers to a channel where you don't pay commission each time. Instagram supports all three but replaces none of them.

The per-order maths nobody puts on the pitch deck
noon Food is the one app that publishes its UAE terms: 25% of item revenue plus a 2% payment fee on regular orders. talabat sets its rate per contract; the trade press reported 15–25% in 2025. Here is an AED 60 order on noon's published rates, with a 15% restaurant-funded discount for comparison. We assume the commission is charged on the price after discount; check how your contract defines item revenue.
| Line | No discount | 15% discount |
|---|---|---|
| Menu price | AED 60.00 | AED 60.00 |
| Discount you fund | 0 | − AED 9.00 |
| Item revenue | AED 60.00 | AED 51.00 |
| Commission 25% | − AED 15.00 | − AED 12.75 |
| Payment fee 2% | − AED 1.20 | − AED 1.02 |
| Left for food, packaging, staff, rent | AED 43.80 | AED 37.23 |
The same guest ordering AED 60 through your own WhatsApp or web link leaves you AED 60 minus card fees and delivery. The difference of roughly AED 16 per order is your budget for direct-order marketing. Put your own food cost into the last line before you approve any discount campaign.
How talabat ranks you
talabat does not publish its algorithm. Operators and analytics vendors report the same signals: recent ratings, order rejections, offline time during your hours, complaints, delays against your stated prep time, and overall order volume. In practice:
- Accept everything you can cook. If the kitchen is overloaded, shorten the hours or pause the brand rather than rejecting orders.
- Set an honest prep time and beat it. A late order costs a rating; a conservative estimate costs nothing.
- Mark sold-out items unavailable instead of cancelling.
- Complete the menu. Every item with a description, price and photo. talabat's partner hub tells restaurants to use descriptions to flag diets such as gluten-free or vegetarian.

Menu photos: shoot for the app, not for Instagram
talabat's partner guidance, as summarised by MenuPhotoAI, asks for landscape images, one clearly presented dish per photo, no text or logos over the food, and a cover photo that is not on a white or grey background. Vertical phone shots get cropped.
The efficient way is one session, two outputs:
- Hero dishes shot landscape, same angle, same surface, so the menu looks like one brand.
- Vertical clips of the same dishes (the pull, the pour, the crunch) for reels and stories.
- A cover image per brand if you run several virtual brands from one kitchen. Each brand needs its own look, or the apps and the customers see the same food in different wrappers.
Sources disagree on photo prices; the same vendor puts UAE menu shoots at AED 600–2,000 per session, which is a market ask, not a statistic.
Paid visibility inside the apps
talabat sells CPC placements at the top of search and category lists. A 2025 vendor guide reports a minimum budget of AED 650 a month and a minimum bid of AED 2.6; talabat has no public rate card, so confirm in your portal.
A simple test with those minimums: AED 650 ÷ AED 2.6 = 250 menu views at the floor bid. If 10% of those views order (use your own conversion rate from the portal), that is 25 orders, or AED 26 of ad cost per order. Compare that with the AED 16 the commission already takes and you see why ads only pay on dishes with real margin. Target the hours and areas where your own sales report shows demand, and switch off outside them.

What nobody tells you about building direct orders
- Your contract may limit it. Read the marketing clause before you put a flyer in the bag.
- Exclusivity is now capped. Federal Ministerial Decision 32 of 2026 allows exclusive deals only if voluntary, up to 12 months and covering up to 10% of an app's restaurants, and Dubai's 2025 guidelines let you list on several apps.
- Direct ordering needs a reply in minutes. A WhatsApp number that answers an hour later loses the order back to the app. That is where an AI assistant pays for itself.
- Marketing messages need opt-in. Collect consent on your own site or order form; see our WhatsApp rules guide.
- A Google profile still matters if you allow pickup. Reviews follow Google's rules: no rewards for reviews.
Vladimir Chernyshev, GM: the app is a landlord
Opinion. For a cloud kitchen, the delivery app works like a landlord who charges a share of every sale instead of rent. You need it to be found, but a business that sells only there owns no customers. The kitchens that survive treat the apps as the acquisition channel and build the rest of the system themselves: photos that sell the dish, a direct link and WhatsApp that answers instantly, a list of people who ordered twice. Pretty reels without that system just send traffic back to the landlord.
A weekly cloud kitchen checklist
- Check acceptance rate, delays and offline time in each portal.
- Answer every review in the apps and on Google.
- Fill in missing descriptions and photos.
- Run the per-order maths before any discount or ad campaign.
- Shoot new dishes landscape and vertical in one session.
- Put your direct order link and opt-in on the packaging where the contract allows.
- Measure what share of orders came direct this week.
